Tomato & Garlic Salsa

  • Tomatoes
  • Garlic
  • Thyme
  • Olive oil / or whatever oil you have
  • a pinch of Salt
  • 1 tsp Sugar
  • Cut the garlic in small pieces
  • Slice the tomatoes in bite size pieces
  • Fry in olive oil the tomatoes with garlic, salt and sugar until the tomatoes become mushy
  • Add oil to cover the tomatoes if there is not already sufficient liquid to cover them
  • Cook at least 15 min on low heat
  • Add more salt to taste
  • Cut the thyme in small pieces

You can use the salsa immediately or jar it - don't forget to sterilize the jar!
