Vegan Cucumber Cupcakes
Ingredients
- 1 kg of peeled and deseeded cucumber
- 200 ml cooking oil
- 1 tsp vanilla
- 1 cup (or less) brown sugar
- 1 kg flour
- 2 tsp baking soda
- 2 tsp salt
- 4 tsp baking powder
- 2 tsp cinnamon
Method
- Peel the cucumbers and deseed them
- Preheat the oven to 180 degrees celsius
- Liquidize the cucumbers with 100 ml of cooking oil
- In a bowl mix all the dry ingredients
- Add the cucumber puree and the rest of the cooking oil
- Mix well and pour into cupcake trays
- Bake for 20 min
- If you are making a loaf instead of cupcakes bake for an hour
