Dried Elderberries

Elderberry trees are prolific here and the berries become ripe from the middle of Septmeber so might as well take advantage and make some tasty elderberry products to use for later on during the winter months when there is little to harvest.

Uses:

• elderberry_syrup used for deserts / cakes etc.
• use as a substitute for raisins when baking (have to be cooked)
• tea (add honey as it will be sour)

Supplies:

• elderberries
• washing basin
• cold water
• drying frames
• sterlized jars
• permanent marker / labels

Method:

• wash the elderberries in cold water
• lay to dry on the drying frames avoiding overlapping as much as possible
• wait until berries are completely dry
• take berries off the stems
• put in sterlized jars
• label jars and store in a cool dry place
