Vegan Chocolate Raspberry Cake

Recipe adapted from here

  • 250ml Soy milk
  • 2 tsp Apple cider vinegar
  • 250g Plain flour
  • 150g Sugar
  • 3 tsp Baking powder
  • 2 tbsp Cocoa powder/ some chocolate chips
  • 2 tsp Vanilla sugar
  • 75ml Vegetable oil
  • 1 tbsp Margarine
  • 150g Raspberries from the forest
  1. Preheat the oven to 220C
  2. Combine vinegar and soy milk in a small bowl
  3. Combine the sugar, baking powder, cocoa powder or chocolate, oil, melted margarine and vanilla
  4. Add the soy milk/vinegar mixture
  5. Fold in the raspberries
  6. Pour the mixture into the baking tin (roughly 20×30 cm)
  7. Bake around 20-25 min
