Dandelion Syrup

Collect Dandelion flowers in full bloom - for each 100 flowers you can make around 2 liters of syrup.

Wash with cold water and set on a flat surface so that the bugs that live in the flowers can leave.

Boil the flowers in enough water to cover the flowers (they will float - push these down until they are submerged) for around 2 minutes and leave the flowers in the water to cool down overnight.

Drain the flowers, you should now have a golden tea.

Add 1kg of sugar and stir for at least 10 minutes.

Let the syrup cool down and bottle.

Make sure that all flower residues have been removed and that the bottles have been sterilized before you pour in the syrup. You can use a muslin to filter the syrup.
